Maybe the sunlight was bended so that the coin was seen in a different position? IDk. I'm grade 5 and was looking for clips about refraction for my end of semester test ( which is next week ). Khan Academy, pls make clips about refraction and reflection for grade 5 and 6.

The coin moved farther away from original position due to force of water from bottle and hence became visible!
